Sweet Potato Muffins

Warm, lightly spiced sweet potato muffins with brown sugar, cinnamon, and a soft homemade crumb.
Ingredients
1 cup sweet potatoes, cooked and mashed
1 cup flour
½ cup brown sugar
¼ vegetable oil
½ milk
2 eggs
1 tsp vanilla
1 tsp cinnamon
2 tsp baking powder
1 tsp salt

Directions
Preheat oven to 350 degrees.
In a large bowl, mix together sweet potato, brown sugar, oil, milk, eggs, and vanilla.
Add flour, cinnamon, baking powder and salt. Mix again until smooth.
Spoon batter into muffin cups or foil muffin tray.
Bake for 20 – 25 minutes until lightly brown.
Yields approx. 12 muffins
